For those who suffer from food sensitivities and allergies–welcome back to dessert! Today, Lauren and Amy whip up a delicious and nutritious Pumpkin Mousse Parfait. It’s easy. It’s tasty. It’s satisfying. And all you need are five ingredients.
1 can organic pumpkin pie mix (yes, the mix that includes spices)
1 can organic coconut milk with the liquid removed.
Dash of vanilla
Crushed gluten-free and sugar-free pecan and cinnamon cookies
2 tablespoons of maple syrup
Mix together pumpkin, coconut, syrup, and vanilla. Set aside.
Layer from bottom of glass to top:
Layer bottom with crushed cookies
Add layer of pumpkin mixture
Alternate layers between pumpkin and cookies
Top with crushed cookies
